- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add 1 finely chopped onion and 2 minced garlic cloves. Sauté for 2-3 minutes until soft and fragrant.
- Introduce 1 pound of ground beef, cooking for 5-7 minutes until browned. Drain excess fat if necessary.
- Stir in 2 diced zucchinis, 1 teaspoon of cumin, 1 teaspoon of paprika, and 1/2 teaspoon of oregano. Cook for about 5 minutes until zucchini is tender.
- Prepare rice according to package instructions, generally around 15-20 minutes until fluffy.
- Fluff rice with a fork and top with the beef and zucchini mixture. Squeeze fresh lemon juice and add Greek yogurt if desired.
