  • 1 cup Tomato Juicy and vibrant.
  • 1 cup Cucumber Adds refreshing crunch.
  • 1 medium Jalapeño Adjust based on heat tolerance.
  • 1 medium Red Onion Can substitute with green onions.

Method
 

Marinating and Grilling
  1. In a resealable bag, combine medium shrimp with fresh lime juice, Tajin seasoning, and vegetable oil. Let it marinate for 20 minutes in the refrigerator.
  2. Preheat grill to medium-high heat. Grill Anaheim chiles for 5-7 minutes until blistered. Steam them for 10 minutes.
  3. Remove shrimp from the refrigerator, drain, and thread onto skewers. Grill shrimp for 2-3 minutes per side until opaque.
Preparing the Campechana
  1. Chop grilled shrimp into bite-sized pieces and finely dice the grilled Anaheim chiles.
  2. In a large bowl, mix together Clamato juice, ketchup, lime juice, and hot sauce. Fold in chopped shrimp, diced chiles, and fresh vegetables.
  3. Cover and refrigerate for at least 30 minutes before serving.
Serving
  1. Serve chilled in stylish glasses with tortilla chips on the side.
