Marinating and Grilling
- In a resealable bag, combine medium shrimp with fresh lime juice, Tajin seasoning, and vegetable oil. Let it marinate for 20 minutes in the refrigerator.
- Preheat grill to medium-high heat. Grill Anaheim chiles for 5-7 minutes until blistered. Steam them for 10 minutes.
- Remove shrimp from the refrigerator, drain, and thread onto skewers. Grill shrimp for 2-3 minutes per side until opaque.
Preparing the Campechana
- Chop grilled shrimp into bite-sized pieces and finely dice the grilled Anaheim chiles.
- In a large bowl, mix together Clamato juice, ketchup, lime juice, and hot sauce. Fold in chopped shrimp, diced chiles, and fresh vegetables.
- Cover and refrigerate for at least 30 minutes before serving.
