  • 2 cups grilled chicken breast consider rotisserie chicken or smoked thighs
For the Dressing
  • 0.5 cups feta cheese crumbled, can substitute with goat cheese
  • 1 tablespoon lemon juice lime juice is an alternative
  • 0.25 cups olive oil can swap with avocado oil
  • 1 tablespoon honey maple syrup can be used for a vegan option

Method
 

Preparation Steps
  1. Wash and dry 4 cups of fresh arugula and place it in a large mixing bowl.
  2. Scatter ½ cup of chopped walnuts and 1 cup of fresh blueberries over the arugula, then toss gently.
  3. Core and thinly slice 1 apple and add to the salad, tossing lightly to mix.
  4. Slice grilled chicken breast into thin strips and add to the salad. Optionally, you can add 1 diced avocado just before serving.
  5. In a small bowl, crumble ½ cup of feta cheese and whisk with 1 tablespoon of lemon juice, ¼ cup of olive oil, and 1 tablespoon of honey until smooth.
  6. Pour the creamy dressing over the salad just before serving, tossing gently.
