  • 2 pounds bottom round roast can be substituted with chuck roast
  • 2 tablespoons steak seasoning pre-made blends are convenient
  • 2 tablespoons butter use oil for dairy-free option
  • 2 medium carrots can substitute with parsnips
  • 1 large yellow onion can substitute with shallots
  • 2 stalks celery can replace with leeks
  • 3 cloves garlic fresh is recommended
  • 1 teaspoon kosher salt sea salt is an alternative
  • 2 tablespoons tomato paste ketchup can replace it in emergency
  • 1 tablespoon thyme (fresh) use dried thyme at a third of the quantity
  • 1 tablespoon rosemary (fresh) use dried sparingly
  • 1 cup beef stock vegetable stock makes a good substitute
  • 1 tablespoon tapioca powder cornstarch is a good alternative
  • 1 cup Guinness non-alcoholic stout can be swapped
  • 1 cup frozen peas fresh peas are a great option
  • to taste freshly ground black pepper
Topping
  • 2 ounces Dubliner cheese aged cheddar is a suitable substitute
  • 2 cups mashed potatoes fresh or leftover both work

Method
 

Cooking Steps
  1. Preheat the oven to 350°F (180°C).
  2. Heat olive oil in a deep skillet over medium-high heat. Season the beef with steak seasoning and sear it until browned. Transfer to a bowl.
  3. Sauté diced carrots, onion, and celery in the skillet with butter and salt for about 7 minutes.
  4. Add tomato paste, minced garlic, thyme, and rosemary. Sauté for 2 more minutes.
  5. Combine beef stock and tapioca powder until smooth and stir into the skillet with beef and Guinness. Mix well.
  6. Cover and braise in the oven for 1 hour and 20 minutes, stirring halfway.
  7. Prepare mashed potatoes and fold in grated Dubliner cheese until melted.
  8. After braising, mix in frozen peas and adjust seasoning.
  9. Spread mashed potatoes over the filling in the skillet and sprinkle with remaining cheese. Bake for 20 minutes.
  10. Broil for 1-2 minutes until golden-brown. Keep an eye on it to prevent burning.
  11. Let cool briefly before serving. Garnish with chopped chives or parsley if desired.
