Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Grease a large ovenproof casserole dish generously with butter.
  3. Layer a quarter of the thinly sliced potatoes across the bottom of the casserole dish.
  4. Sprinkle a third of the chopped onions and carrots over the potatoes, then add a third of the corned beef. Season with salt and pepper.
  5. Repeat the layering process two more times with the remaining ingredients.
  6. Pour the beef stock evenly over the layered ingredients.
  7. Brush the top layer of potatoes with melted butter.
  8. Cover the casserole dish tightly with parchment paper and then with aluminum foil. Bake for 50 minutes.
  9. Uncover and continue baking for an additional 15 to 20 minutes.
  10. Let it cool for a few minutes before serving.
