- Preheat your oven to 180°C (350°F).
- Grease a large ovenproof casserole dish generously with butter.
- Layer a quarter of the thinly sliced potatoes across the bottom of the casserole dish.
- Sprinkle a third of the chopped onions and carrots over the potatoes, then add a third of the corned beef. Season with salt and pepper.
- Repeat the layering process two more times with the remaining ingredients.
- Pour the beef stock evenly over the layered ingredients.
- Brush the top layer of potatoes with melted butter.
- Cover the casserole dish tightly with parchment paper and then with aluminum foil. Bake for 50 minutes.
- Uncover and continue baking for an additional 15 to 20 minutes.
- Let it cool for a few minutes before serving.
