Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and roast the Hatch chiles for 15–20 minutes until blistered and charred.
  2. Peel and dice the chiles once cooled, removing seeds if you prefer less heat.
  3. Dice the Roma tomatoes and sweet onion, and chop the cilantro.
  4. Combine all ingredients in a mixing bowl, adding lime juice, salt, and pepper to taste.
  5. Taste and adjust seasoning before letting sit for 10 minutes.
  6. Serve with a slotted spoon, pairing it with tortilla chips, grilled meats, or tacos.
