- Grate the red radishes and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
- Squeeze out moisture using a clean towel or cheesecloth.
- Combine the drained radishes with Greek yogurt, grated garlic, olive oil, and lemon juice in a mixing bowl.
- Add minced scallions and chopped dill. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 2 hours or up to 12 hours for best flavor.
- Before serving, stir and present in a bowl, garnished with dill or olive oil.
