Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your baking sheet and parchment paper for easy cleanup.
  2. Rinse and cube 2-3 potatoes into bite-sized pieces. Toss with olive oil, salt, and optional chile powder. Spread on the baking sheet.
  3. Roast the potatoes for 15-20 minutes until light golden. Check for doneness and roast longer if needed.
  4. Add 4-6 strips of bacon (or chorizo) and 8-10 tomatillos to the baking sheet. Bake for an additional 20 minutes.
  5. Scramble 6-8 eggs in a non-stick skillet with melted butter until fluffy, about 5-7 minutes. Set aside.
  6. Transfer roasted tomatillos to a blender with chopped onion, garlic, jalapeños, and cilantro. Blend until smooth.
  7. Assemble bowls with crispy potatoes, fluffy eggs, bacon, and Salsa Verde. Sprinkle with cheese and lime.
