  • 2 medium onions yellow or white
  • 4 medium Russet potatoes peeled and cubed
  • 2 medium carrots optional, sliced

  • 2 cups broth or beer/white wine if using
For Seasoning
  • 1 tablespoon fresh herbs e.g., thyme, parsley

Step-by-Step Instructions
  1. Prepare Ingredients: Slice sausages into thick rounds, chop bacon, dice onions, peel and cube potatoes, and slice carrots if using.
  2. Brown Meat: In a large pot, heat on medium-high and add bacon. Cook until crispy, about 5–7 minutes. Add sausage rounds and brown for another 5 minutes.
  3. Add Vegetables: Stir in onions and cook for about 3 minutes, then add potatoes and carrots, sautéing for another 5 minutes.
  4. Add Liquids: Pour in broth (or beer/wine), season with salt and pepper, and stir to combine.
  5. Simmer: Cover pot and reduce heat to low, simmer for about 1 hour until vegetables are tender.
  6. Serve: Remove from heat, garnish with chopped herbs and serve hot with crusty bread.
