  • 4 strips Bacon smoked
  • 2 large Onions yellow or brown
  • 3 cups Potatoes waxy, cubed
  • 2 cups Carrots optional, sliced
For the Broth
  • 4 cups Broth chicken or vegetable
  • 1 tablespoon Herbs parsley and thyme, fresh or dried
  • 1 cup Beer or White Wine optional, for added flavor

Step-by-Step Instructions
  1. Prepare your vegetables and meats by chopping the onions, cubing the potatoes, slicing the sausages, and chopping the bacon.
  2. In the pot, heat oil over medium-high heat, add bacon, and cook until crispy (about 5 minutes). Then, brown the sausage pieces (5-7 minutes).
  3. Add onions to the pot, stir, and cook for about 5 minutes until translucent. If using, add sliced carrots and stir occasionally.
  4. Layer cubed potatoes over the meat, pour in the broth, sprinkle in herbs, and add beer or wine if desired.
  5. Bring to a gentle boil, reduce heat to low, cover, and let it simmer for 1 hour.
  6. Serve hot in bowls with crusty bread or Irish soda bread for dipping.
