Preparation Steps
  1. Preheat your oven to 425°F (220°C) and let chicken sit at room temperature for 15 minutes.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic for 3 to 5 minutes until fragrant.
  3. Add diced bell peppers and continue to sauté for another 5 minutes until softened.
  4. Add chicken pieces, cooking for 5 to 7 minutes until all sides are browned.
  5. Stir in tomato sauce, chicken broth, and fresh herbs. Let simmer for 2 to 3 minutes.
  6. Transfer the mixture to a baking dish and crumble feta cheese on top.
  7. Bake uncovered in the preheated oven for 25 to 30 minutes until chicken is cooked through.
  8. Let the casserole cool for a few minutes and garnish with chopped parsley before serving.
