- Preheat your oven to 400°F (204°C).
- Heat a splash of olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing for 3-4 minutes.
- Incorporate diced carrots and celery into the skillet, stirring for an additional 5 minutes.
- Pour in heavy cream and chicken or seafood stock, stirring until combined. Simmer for 5 minutes.
- Fold in lobster meat and frozen peas, stirring for another 5 minutes.
