- In a mixing bowl, combine 2 tablespoons of miso paste with 1 tablespoon of chili oil. Stir well until smooth and creamy.
- Bring a large pot of water to a rolling boil. Add your choice of noodles and cook according to package instructions, typically 6-8 minutes.
- In a skillet, heat 2 tablespoons of oil over medium-high heat. Sauté bok choy, sliced carrots, and red peppers for 4-5 minutes.
- Add the drained noodles to the skillet with the sautéed vegetables. Drizzle your miso-chili sauce over the top and toss gently for about 2-3 minutes.
- Transfer the Miso Chili Noodles to serving bowls. Sprinkle with sesame seeds and serve immediately.
