Step-by-Step Instructions

  2. Bake the unpeeled sweet potatoes for 40-45 minutes until soft.
  3. Peel and slice the cooked sweet potatoes into ½-inch rounds.
  4. Wash, peel, core, and slice the apples into thin wedges, tossing with lemon juice.
  5. Layer sweet potato rounds and apple slices in a greased baking dish.
  6. In a saucepan, combine honey, butter, cinnamon, and vanilla. Heat until melted and smooth.
  7. Toast pecans in a skillet for about 5 minutes until fragrant.
  8. Pour the honey glaze over layered sweet potatoes and apples, sprinkle with pecans, and bake at 350°F (175°C) for 15-20 minutes.
  9. Remove from the oven, let cool slightly, and serve.
