Ingredients
  

For the Chicken Marinade
  • 4 pieces Boneless, skinless chicken breasts
  • 0.25 cup Honey can substitute with agave syrup for a vegan option
  • 2 pieces Limes, juiced freshly squeezed
  • 1 piece Lime, zested
  • 2 cloves Minced garlic
  • 1 teaspoon Ground cumin optional
  • to taste Salt
  • to taste Pepper
For the Rice
  • 1 cup Jasmine rice can substitute with basmati rice
  • 2 cups Chicken broth
For the Avocado Mixture
  • 1 piece Diced avocado
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh cilantro, chopped can substitute with parsley
  • 1 tablespoon Olive oil
For Serving
  • limes wedge Lime wedges for garnish

Method
 

Marinade Preparation
  1. In a bowl, whisk together the honey, juice and zest of 2 limes, minced garlic, cumin, salt, and pepper until well combined.
  2. This mixture should be smooth and slightly thickened.
Marinate Chicken
  1. Place chicken breasts into a resealable bag or shallow dish and pour marinade over it. Ensure thorough coating.
  2. Refrigerate for 30 minutes to 2 hours.
Cook Rice
  1. Rinse jasmine rice under cold water. In a saucepan, bring chicken broth to a boil.
  2. Add rinsed rice, cover, and simmer on low heat for about 15 minutes or until liquid is absorbed.
  3. Fluff with a fork.
Grill Preparation
  1. Preheat grill to medium-high heat. Remove chicken from marinade.
  2. Let excess marinade drip off.
Grill Chicken
  1. Place chicken on grill and cook for 6-7 minutes on each side.
  2. Ensure internal temperature reaches 165°F (75°C) and let rest for 5 minutes.
Mix Avocado Ingredients
  1. In a bowl, combine diced avocado, red onion, cilantro, and olive oil. Gently toss until coated.
Assemble Stack
  1. Layer cooked jasmine rice on the bottom of your serving dish.
  2. Slice grilled chicken and place atop the rice, followed by spoonfuls of avocado mixture.
Serve
  1. Garnish with lime wedges and additional chopped cilantro, allowing everyone to customize their flavor.
