Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare four 9-inch round cake pans with parchment paper and grease them.
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in the eggs one at a time.
  3. Gradually add flour, heavy cream, baking powder, and salt alternating with vanilla and coconut extract.
  4. Distribute cake batter among pans and bake for 50 minutes until a toothpick comes out clean.
  5. Let the layers cool for about 10 minutes in pans, then transfer to a wire rack until completely cooled.
  6. Beat together cream cheese, heavy cream, and confectioners' sugar until fluffy, adding coconut extract.
  7. Assemble the cake by layering frosting among the layers and coating the top and sides with frosting.
  8. Garnish with toasted coconut flakes around the sides for added texture.
  9. Slice and serve the cake with fresh fruit or whipped cream if desired.
