  • 1 cup Cheddar Cheese Shredded, can substitute with Monterey Jack
  • 1/2 cup Red Onion Finely chopped
  • 1 cup Bell Pepper Any color works
  • 1/2 cup Sour Cream Can substitute with Greek yogurt
  • 1 tsp Paprika Smoked paprika gives additional depth
  • 1 tsp Garlic Powder Or use fresh garlic
  • 1 tsp Onion Powder Optional if using fresh onions
  • 1/4 tsp Cayenne Adjust according to taste
For Dipping
  • 1 cup Basil Pesto Homemade or store-bought

Step-by-Step Instructions for Antojitos
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, diced green chilies, shredded cheddar cheese, finely chopped red onion, and bell pepper. Add sour cream along with garlic powder, onion powder, paprika, and cayenne pepper. Mix well until smooth.
  3. Take a flour tortilla and spread an even layer of the filling, leaving about an inch around the edges. Roll the tortilla tightly.
  4. Slice each rolled tortilla into five equal pieces at a 45-degree angle.
  5. Place the cut antojitos seam-side down on the prepared baking sheet and bake for about 8 minutes.
  6. Switch oven to broil and cook for an additional 5 minutes until golden.
  7. Allow to cool slightly and serve warm with basil pesto or sour cream.
