Step-by-Step Instructions for Char Siu Chicken
- In a large mixing bowl, combine ¼ cup soy sauce, ¼ cup hoisin sauce, 2 tablespoons rice vinegar, 2 tablespoons honey, 1 teaspoon five-spice powder, 3 minced garlic cloves, and 1 tablespoon grated ginger. Whisk until well blended.
- Take 1.5 pounds of bone-in, skin-on chicken thighs and immerse them in the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 325°F (165°C) and prepare a baking sheet lined with parchment paper.
- Remove the chicken thighs from the marinade, allowing excess to drip off. Place on the baking sheet, skin-side up.
- Roast for 45-55 minutes, basting every 15 minutes, until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before garnishing with sliced green onions and sesame seeds.

Notes
For the best taste, marinate the chicken for at least 4 hours or overnight if possible. Keep an eye on the chicken in the last 10 minutes to prevent overcooking.
