  • 1 cup Corn Kernels fresh, frozen, or canned
  • 14 oz Chicken shredded rotisserie chicken; could substitute with turkey
  • 3.5 cups Chicken Broth or vegetable broth for vegetarian option
For the Cheese Topping
  • 150 g Monterey Jack Cheese or cheddar/non-dairy cheese
For Serving
  • 1 Avocado for topping
  • 1 Salsa homemade or store-bought
  • 1 cup Greek Yogurt as an alternative to sour cream

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large casserole dish, combine diced onion, bell pepper, jalapeño, dry long-grain white rice, and corn kernels. Mix with chili powder, garlic powder, cumin, oregano, and salt.
  3. Pour in the chicken broth and add the shredded chicken, stirring well.
  4. Cover tightly with aluminum foil and bake for 50-60 minutes.
  5. Remove the foil, sprinkle Monterey Jack cheese over the top, and bake uncovered for an additional 5-10 minutes.
  6. Let the casserole rest for a few minutes before serving. Top with avocado, salsa, or Greek yogurt.
