Step-by-Step Instructions
  1. Prepare Chicken: Trim the tops of the drumsticks and french-cut them to form a lollipop shape.
  2. Marinate Chicken: In a bowl, combine garlic, ginger, chili powder, black pepper, garam masala, soy sauce, and olive oil. Coat the drumsticks and refrigerate for at least 30 minutes.
  3. Roast Chicken: Preheat oven to 450°F. Place chicken on a lined baking sheet and roast for about 20 minutes, flipping halfway through.
  4. Make Sauce: Heat olive oil and butter in a saucepan, then sauté onion, garlic, and ginger for 5-8 minutes. Add remaining sauce ingredients and simmer for 10 minutes.
  5. Coat Chicken: Dip the roasted drumsticks in the sauce, then return to the oven for another 8-10 minutes.
  6. Rest: Let the chicken rest for 5-10 minutes before serving.
