- Prepare Marinade: In a food processor, combine 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, and 2 tablespoons of freshly squeezed lemon juice. Add 2 crushed garlic cloves, 2 teaspoons of grated fresh ginger, 1 chopped red chilli, and 1 chopped stalk of lemongrass. Blend until smooth and well combined. Adjust salt as needed.
- Marinate Chicken: Place 1 kg of chicken wings in a large mixing bowl. Pour the marinade over the wings, ensuring they are fully coated. Cover with plastic wrap and refrigerate for at least 30 minutes, preferably overnight.
- Preheat Air Fryer: Preheat your air fryer to 200°C (390°F). This will ensure a perfect crispy finish. While it's heating, take the marinated wings out to reach room temperature.
- Air Fry Chicken: Arrange the marinated chicken wings in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through until golden brown.
- Toast Peanuts: While the wings air fry, toast 1 cup of roughly chopped peanuts in a pan over medium heat for about 5 minutes until golden.
- Serve: Remove the wings from the air fryer and place on a serving platter. Top with toasted peanuts and spring onions.

For best results, marinate the wings overnight. You can also bake them at 220°C (425°F) for 25-30 minutes if you don’t have an air fryer.
