Ingredients
  

For the Marinade
  • 1 kg Chicken Wings
  • 1 tbsp Oil vegetable or sesame oil can work as substitutes
  • 3 tbsp Soy Sauce tamari is a gluten-free option
  • 3 tbsp Brown Sugar consider coconut sugar for a healthier twist
  • 2 tbsp Lemon Juice/Lime Juice freshly squeezed juice is preferred
  • 2 cloves Garlic Cloves garlic powder can substitute
  • 2 tsp Fresh Ginger grated; ground ginger can also be used
  • 1 unit Red Chilli adjust based on spice preference
  • 1 stalk Lemongrass roughly chopped; can use lemongrass paste
  • Salt to taste
For Serving
  • 1 cup Peanuts roughly chopped; cashews can be used instead
  • 0.5 cup Spring Onions/Green Onions finely chopped for garnish

Step-by-Step Instructions
  1. Prepare Marinade: In a food processor, combine 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, and 2 tablespoons of freshly squeezed lemon juice. Add 2 crushed garlic cloves, 2 teaspoons of grated fresh ginger, 1 chopped red chilli, and 1 chopped stalk of lemongrass. Blend until smooth and well combined. Adjust salt as needed.
  2. Marinate Chicken: Place 1 kg of chicken wings in a large mixing bowl. Pour the marinade over the wings, ensuring they are fully coated. Cover with plastic wrap and refrigerate for at least 30 minutes, preferably overnight.
  3. Preheat Air Fryer: Preheat your air fryer to 200°C (390°F). This will ensure a perfect crispy finish. While it's heating, take the marinated wings out to reach room temperature.
  4. Air Fry Chicken: Arrange the marinated chicken wings in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through until golden brown.
  5. Toast Peanuts: While the wings air fry, toast 1 cup of roughly chopped peanuts in a pan over medium heat for about 5 minutes until golden.
  6. Serve: Remove the wings from the air fryer and place on a serving platter. Top with toasted peanuts and spring onions.

Notes

For best results, marinate the wings overnight. You can also bake them at 220°C (425°F) for 25-30 minutes if you don’t have an air fryer.
