- Thaw the puff pastry by placing it in the refrigerator overnight or let it sit at room temperature for about 30 minutes.
- Prepare the cream cheese filling by mixing the softened cream cheese, powdered sugar, and vanilla until smooth.
- Roll out the puff pastry on a floured surface into a square about 10.5 inches and cut into 9 equal squares.
- Fill each square with a dollop of cream cheese filling and 2-3 raspberries.
- Fold the corners of each pastry square towards the center and pinch to seal.
- Chill the assembled pastries on a baking sheet in the freezer for at least 30 minutes.
