  • 1/2 cup Powdered Sugar Can substitute with granulated sugar blended to powder
  • 1 teaspoon Vanilla Extract Enhances flavor
For the Topping
  • 1 cup Fresh Raspberries Can use frozen, thawed and dried
  • 1 large Egg For egg wash

Method
 

Step-by-Step Instructions
  1. Thaw the puff pastry by placing it in the refrigerator overnight or let it sit at room temperature for about 30 minutes.
  2. Prepare the cream cheese filling by mixing the softened cream cheese, powdered sugar, and vanilla until smooth.
  3. Roll out the puff pastry on a floured surface into a square about 10.5 inches and cut into 9 equal squares.
  4. Fill each square with a dollop of cream cheese filling and 2-3 raspberries.
  5. Fold the corners of each pastry square towards the center and pinch to seal.
  6. Chill the assembled pastries on a baking sheet in the freezer for at least 30 minutes.
  7. Preheat the oven to 400°F (200°C).
  8. Brush the tops of pastries with beaten egg and bake for 25-30 minutes until golden brown.
  9. Dust with powdered sugar before serving if desired.
