- Melt Unsalted Butter in a microwave-safe bowl in 30-second intervals until fully melted. Cool in the fridge for about 20 minutes.
- Combine the cooled butter with Granulated Sugar, Brown Sugar, and Red Gel Food Coloring in a large mixing bowl. Whisk until creamy.
- Add Egg and Vanilla Extract to the mixture and blend until fully incorporated.
- In a separate bowl, whisk together All-Purpose Flour, Cocoa Powder, Baking Powder, Baking Soda, and Salt. Gradually add to the wet mixture, stirring until combined.
- Scoop out the dough into balls and refrigerate for at least 1 hour.
- Preheat oven to 180ºC (355ºF).
- Bake chilled dough balls for 10-11 minutes until edges are set but centers look soft. Cool on a wire rack.
- For frosting, beat softened Butter in a bowl, add Cream Cheese and Vanilla Bean Paste until smooth, then add Powdered Sugar until thick and spreadable.
- Once cooled, frost the cookies with the cream cheese frosting.
