  • 1 lb Beef (top round, eye of round, or flank steak) Lean cuts are best for dehydration.
For the Marinade
  • 1/2 cup Soy Sauce Opt for low-sodium for a healthier twist.
  • 2 tablespoons Worcestershire Sauce
  • 1/4 cup Honey Can substitute with maple syrup.
  • 1/2 cup BBQ Sauce Choose your favorite.
For the Spices
  • 2 teaspoons Smoked Paprika Regular paprika can stand in.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 1 teaspoon Onion Powder Avoid fresh onions.
  • 1/2 teaspoon Black Pepper Use freshly cracked for added zing.
  • 1/2 teaspoon Cayenne Pepper Adjust to taste.
  • 1 teaspoon Red Pepper Flakes Optional for extra heat.
  • 1 teaspoon Liquid Smoke Essential for BBQ flavor.

Method
 

Preparation Steps
  1. Freeze the beef for 30–45 minutes, then slice into ¼-inch thick strips against the grain.
  2. In a mixing bowl, whisk together soy sauce, Worcestershire sauce, honey, BBQ sauce, and spices.
  3. Place sliced beef in a ziplock bag, pour marinade over, seal and refrigerate for at least 8 hours or overnight.
  4. Dehydrate the beef in a dehydrator at 160°F (70°C) for 4–6 hours, or in a preheated oven at 175°F (80°C) for about 4 hours.
  5. Once dried, cool the jerky at room temperature and store in an airtight container.
