Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and cinnamon in a bowl. Mix in melted butter until coated. Press into a 9-inch springform pan. Bake for 8 minutes until golden. Let cool.
  2. Lower oven to 325°F (160°C). Beat cream cheese and light brown sugar until fluffy. In another bowl, whisk pumpkin puree, eggs, sour cream, flour, pumpkin pie spice, salt, and vanilla. Combine with cream cheese mixture on low speed.
  3. Pour filling over cooled crust, tap to release air bubbles, and place a pan of hot water in the oven. Bake for 50-60 minutes until edges are set and center wobbles slightly.
  4. Turn off oven, prop door open for 30 minutes to cool. Refrigerate for at least 4 hours or overnight to set flavors.
