  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter softened
  • 1 cups granulated white sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 0.75 cups buttermilk or homemade with milk and lemon juice
  • 0.25 cups water for dissolving matcha
  • 0.5 cups whole milk
  • 0.5 cups sweetened condensed milk adjust sweetness to taste
For the Frosting
  • 8 ounces cream cheese softened
  • 0.5 cups powdered sugar
  • 0.25 cups freeze-dried strawberries finely ground

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a 9x9 inch baking pan.
  2. In a bowl, sift together flour, matcha powder, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy, then add eggs and vanilla and mix well.
  4. Gradually add dry ingredients to the butter mixture alternately with buttermilk, mixing until just combined.
  5. Pour batter into the pan and bake for 38-42 minutes until a toothpick comes out clean.
  6. Let cake cool in the pan for 30 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the matcha soak by mixing matcha powder with warm water, then combine with milk and condensed milk.
  8. Poke holes in the cooled cake and slowly pour the matcha soak over it for absorption.
  9. Beat together frosting ingredients until smooth, then frost the cooled cake generously.
  10. Slice into 16 pieces and serve.
