Step-by-Step Instructions for Italian Chicken Panini
  1. Lay out two thick slices of Italian bread on a clean surface. Spread pesto on one side of each slice.
  2. On the unspread side of one slice, layer half a cooked chicken breast, followed by red onion and roasted red peppers. Top with mozzarella cheese.
  3. Cover with the second slice of bread, pesto side down, and press it together.
  4. Preheat your panini press for about 5 minutes and lightly coat the grill plates with cooking spray.
  5. Place the sandwich in the panini press and grill for 3-4 minutes until golden and crispy.
  6. Remove the panini, let it rest for a minute, and then slice diagonally to serve warm.
