- In a medium saucepan, pour in 3 cups of vanilla coconut milk and sprinkle in ½ teaspoon of salt. Place over high heat and bring to a gentle boil.
- Once boiling, add 1 ½ cups of jasmine rice and ¼ cup of sugar to the saucepan. Stir gently and reduce the heat to low, cover, and let it simmer for 15 minutes.
- After 15 minutes, check if the liquid is absorbed and rice is fluffy. If desired, add a splash more coconut milk, then fluff gently with a fork.
- In a dry skillet over medium heat, add ⅓ cup of coconut shreds, stirring constantly for about 2-3 minutes until golden brown.
- Fluff the rice once more and serve hot in bowls, topping with toasted coconut and a drizzle of coconut milk.
