  • 0.5 teaspoon salt essential for enhancing flavors
  • 0.25 cup sugar adjust based on preference

  • 0.33 cup toasted coconut toast until golden for best flavor

Method
 

Cooking Instructions
  1. In a medium saucepan, pour in 3 cups of vanilla coconut milk and sprinkle in ½ teaspoon of salt. Place over high heat and bring to a gentle boil.
  2. Once boiling, add 1 ½ cups of jasmine rice and ¼ cup of sugar to the saucepan. Stir gently and reduce the heat to low, cover, and let it simmer for 15 minutes.
  3. After 15 minutes, check if the liquid is absorbed and rice is fluffy. If desired, add a splash more coconut milk, then fluff gently with a fork.
  4. In a dry skillet over medium heat, add ⅓ cup of coconut shreds, stirring constantly for about 2-3 minutes until golden brown.
  5. Fluff the rice once more and serve hot in bowls, topping with toasted coconut and a drizzle of coconut milk.
