- In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne, salt, and pepper. Use your hands to gently mix until just combined.
- Before shaping the kofta, cook a small patty in a non-stick skillet for about 3-4 minutes to taste the seasoning.
- Using wet hands, divide the mixture into portions and shape into elongated pieces, about 1.5 to 2 inches long.
- Cover the shaped kofta and refrigerate for at least 30 minutes.
- In a large skillet, heat oil over medium heat and add the kofta, searing for about 6-8 minutes until golden brown and fully cooked.
- Prepare the garlic yogurt sauce by mixing Greek yogurt, minced garlic, lemon juice, olive oil, and dill. Season with salt and pepper.
- Transfer the cooked kofta to a serving plate, drizzle with creamy sauce, and garnish with parsley and lemon.
