Ingredients
  

For the Kofta
  • 1 pound Ground Chicken Opt for dark meat for extra flavor.
  • 1 medium Onion Finely chopped; shallots can be used.
  • 3 cloves Garlic Minced; adjust to taste.
  • 1/4 cup Fresh Cilantro Chopped; parsley can be substituted.
  • 1/4 cup Fresh Mint Chopped; optional.
  • 1 large Egg Acts as a binder.
  • 1/2 cup Breadcrumbs Panko for extra crispy texture.
  • 1 teaspoon Ground Cumin Essential for flavor.
  • 1 teaspoon Ground Coriander Enhances flavor complexity.
  • 1 teaspoon Smoked Paprika Regular paprika can be used.
  • 1/4 teaspoon Cayenne Pepper Adjust heat to taste.
For the Garlic Yogurt Sauce
  • 1 cup Greek Yogurt Low-fat or full-fat.
  • 2 tablespoons Fresh Dill Chopped; tarragon can be alternative.
  • 1 tablespoon Lemon Juice For flavor brightness.
  • 1 tablespoon Olive Oil Mild oil can also be used.
For Serving
  • 1/4 cup Parsley Freshly chopped for garnish.
  • 1 whole Lemon Wedges For added brightness.

Method
 

Preparation
  1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne, salt, and pepper. Use your hands to gently mix until just combined.
  2. Before shaping the kofta, cook a small patty in a non-stick skillet for about 3-4 minutes to taste the seasoning.
  3. Using wet hands, divide the mixture into portions and shape into elongated pieces, about 1.5 to 2 inches long.
  4. Cover the shaped kofta and refrigerate for at least 30 minutes.
  5. In a large skillet, heat oil over medium heat and add the kofta, searing for about 6-8 minutes until golden brown and fully cooked.
  6. Prepare the garlic yogurt sauce by mixing Greek yogurt, minced garlic, lemon juice, olive oil, and dill. Season with salt and pepper.
  7. Transfer the cooked kofta to a serving plate, drizzle with creamy sauce, and garnish with parsley and lemon.
