- In a large bowl, combine dark soy sauce, Shaoxing cooking wine, sugar, minced ginger, garlic, and light soy sauce to create a marinade. Rub it all over the chicken. Cover and refrigerate for at least 2 hours.
- Preheat your oven to 200°C (400°F) and let the chicken come to room temperature.
- Place a wire rack in a roasting pan and transfer the marinated chicken onto the rack, breast side up.
- Roast the chicken for 1 to 1.5 hours, covering loosely with aluminum foil after 30 minutes.
- Check the internal temperature with a meat thermometer. It should read 165°F (74°C).
- Let the chicken rest for 30 minutes before carving.
