Ingredients
  

For the Pasta
  • 12 oz pasta penne or fusilli recommended
For the Filling
  • 2 cups cottage cheese can substitute with ricotta
  • 1 large egg optional
  • 1 cup Parmesan cheese shredded
  • 1 tbsp Italian seasoning
For the Meat Sauce
  • 1 lb ground beef can substitute with ground turkey or tofu
  • 2 medium shallots or onions
  • 2 cloves garlic minced
  • 1 cube beef stock or vegetable stock for a vegetarian option
  • 1/2 cup water as needed
  • 1 tbsp maple syrup or honey/agave
  • 1 tbsp basil fresh or dried
  • to taste salt
  • to taste pepper
  • 2 cups passata or tomato sauce or crushed tomatoes
For Toppings
  • 1 cup cheddar cheese any melting cheese
  • 1/2 cup additional Parmesan cheese
  • 2 tbsp parsley optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cook pasta in salted water according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  3. In a bowl, combine cottage cheese, optional egg, Parmesan, and Italian seasoning. Mix until creamy.
  4. In a skillet, brown the ground beef with shallots and minced garlic for 5-7 minutes.
  5. Add beef stock cube, water, maple syrup, basil, salt, and pepper to the beef. Stir for 2 minutes.
  6. Mix in passata or tomato sauce and simmer for 5-8 minutes until thickened.
  7. Fold cooked pasta into the sauce until well combined.
  8. In a greased casserole dish, layer half the pasta mixture, then the cottage cheese mixture, followed by the remaining pasta.
  9. Top with cheddar and additional Parmesan cheese.
  10. Bake for 30 minutes until cheese is melted. Broil for an additional 2-4 minutes for a golden crust.
  11. Let rest for 10 minutes before slicing.
  12. Garnish with parsley and serve warm.
