- Preheat the oven to 350°F (175°C).
- Cook pasta in salted water according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a bowl, combine cottage cheese, optional egg, Parmesan, and Italian seasoning. Mix until creamy.
- In a skillet, brown the ground beef with shallots and minced garlic for 5-7 minutes.
- Add beef stock cube, water, maple syrup, basil, salt, and pepper to the beef. Stir for 2 minutes.
- Mix in passata or tomato sauce and simmer for 5-8 minutes until thickened.
- Fold cooked pasta into the sauce until well combined.
- In a greased casserole dish, layer half the pasta mixture, then the cottage cheese mixture, followed by the remaining pasta.
- Top with cheddar and additional Parmesan cheese.
- Bake for 30 minutes until cheese is melted. Broil for an additional 2-4 minutes for a golden crust.
- Let rest for 10 minutes before slicing.
- Garnish with parsley and serve warm.
