Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together olive oil, balsamic vinegar, fresh lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Place the chicken in a bowl or resealable bag and pour the marinade over, ensuring all pieces are coated. Marinate for 15-30 minutes.
  4. Wash and halve the baby potatoes, toss them with olive oil, salt, pepper, and optional herbs.
  5. On a baking sheet, arrange marinated chicken on one side and seasoned potatoes on the other.
  6. Roast in the oven for 25-30 minutes until chicken reaches 165°F (75°C) and potatoes are fork-tender.
  7. Remove from the oven and serve, optionally drizzling remaining marinade over the top.
