  • 2 Carrots Diced small for a better bite.
  • 2 Scallions Red onions can be a sharper alternative.
  • 1/4 cup Parsley Cilantro can be used or omitted.
For the Dressing
  • 2 tablespoons Lemon Juice Fresh lemons provide the best flavor.
  • 1 teaspoon Garlic Powder Fresh garlic is a great alternative.
  • 1/4 teaspoon Red Pepper Flakes Omit if milder dish is preferred.
  • 1 teaspoon Mineral Salt
  • 1/4 teaspoon Fresh Cracked Pepper

Method
 

Step-by-Step Instructions
  1. Rinse quinoa thoroughly under cool running water for 1-2 minutes to eliminate bitterness.
  2. In a medium pot, combine the drained quinoa with water and garlic powder. Bring to a boil, then simmer for 15 minutes. Let it sit covered for another 10-15 minutes.
  3. Chop cucumber, yellow bell pepper, and carrots into small pieces. Thinly slice scallions and chop parsley.
  4. In a large bowl, combine cooked quinoa and chickpeas, add prepped veggies, lemon juice, and red pepper flakes. Mix gently.
  5. Serve salad warm, at room temperature, or chilled. Drizzle more lemon juice and add avocado if desired.
