Lemon Syrup
  • 1 cup Fresh Lemon Juice use fresh, organic lemons for the best taste
  • 1/2 cup Water to dissolve sugar
  • 1 cup Granulated Sugar can be substituted with honey
Mascarpone Cream
  • 1 cup Heavy Whipping Cream ensure it’s cold for optimal whipping
  • 8 ounces Mascarpone Cheese or cream cheese mixed with heavy cream
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Zest to intensify flavor
Assembly
  • 24 pieces Ladyfinger Cookies (Savoiardi) opt for gluten-free if necessary
  • to taste Extra Lemon Zest or Candied Lemon Slices for garnishing

Method
 

Making the Lemon Tiramisu
  1. In a medium saucepan, combine fresh lemon juice, water, and granulated sugar. Over medium heat, stir until the sugar fully dissolves, about 2-3 minutes. Remove from heat and allow to cool.
  2. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form, around 4-6 minutes. In another bowl, mix mascarpone cheese with lemon zest until smooth. Fold in the whipped cream.
  3. Dip each ladyfinger into the cooled lemon syrup for 1-2 seconds. Arrange in a 9x9 inch dish, spread half of the mascarpone cream over, and repeat with another layer.
  4. Cover with plastic wrap and chill for at least 4-6 hours, preferably overnight.
  5. Dust the top with extra lemon zest or arrange candied lemon slices before serving.
