Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and line two baking sheets with silicone mats or parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a stand mixer, cream the softened unsalted butter, granulated sugar, and lime zest until light and fluffy.
  4. Incorporate the eggs one at a time, mixing well, then add lime juice and optional food coloring.
  5. Gradually mix the dry ingredients into the wet until just combined. Chill the dough if sticky.
  6. Shape the dough into 1-inch balls, roll in granulated sugar, then in powdered sugar.
  7. Place dough balls on prepared sheets, bake for 9 to 11 minutes until edges are set and centers are shiny.
  8. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
