Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Scrub the large russet potatoes and cut into ½-inch thick fries.
  2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
  3. Drain and pat the fries dry completely, then toss them with olive oil and seasonings.
  4. Spread the fries in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway.
  5. While the fries bake, prepare the Voodoo Sauce by whisking all sauce ingredients together in a mixing bowl.
  6. Cook and crumble the bacon in a skillet until crispy.
  7. Once baked, transfer fries to a platter and drizzle with Voodoo Sauce.
  8. Top with bacon, green onions, and cheese; add pickled jalapeños if desired.
  9. Serve immediately and enjoy!
