  3. Chill seasoned wings in the refrigerator for at least 1 hour or overnight for enhanced crispiness.
  4. Mince habanero peppers and set aside for sauce.
  5. Melt butter in a saucepan, add minced garlic and ginger, sauté until fragrant.
  6. Stir in mango puree, white vinegar, honey, brown sugar, soy sauce, minced habaneros, and optional spices. Mix well.
  7. Bring sauce to a gentle simmer over low heat for 15-20 minutes until thickened.
  8. Taste the sauce and adjust flavors with salt, pepper, or water as needed.
  9. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
