  1. Begin by placing softened butter in a large mixing bowl. Beat it together with confectioner's sugar until light and fluffy, about 3–4 minutes.
  2. Mix in the vanilla extract until fully combined. Gradually add in cornstarch, all-purpose flour, and matcha powder, mixing on low speed.
  3. Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least 2 hours.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Roll out one portion of the chilled dough to about 1/3 inch thick. Use cookie cutters to shape the cookies.
