  • 4 medium Sweet Potatoes or butternut squash
For the Filling
  • 1 can Canned Chickpeas or white beans/cooked quinoa
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 small Red Onion or green onions
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese or plant-based cheese for vegan
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Mint optional
For the Dressing
  • 4 tablespoons Extra Virgin Olive Oil high-quality
  • 2 tablespoons Lemon Juice
  • 2 cloves Minced Garlic or roasted garlic
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pierce the sweet potatoes several times and roast them for 40-50 minutes until fork-tender.
  3. In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta. Add parsley and mint.
  4. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a separate bowl and pour over the filling. Toss gently.
  5. Slice the roasted sweet potatoes lengthwise and fluff the insides to make room for the filling.
  6. Spoon the filling into each sweet potato and serve immediately.
