  • 2 tbsp extra virgin olive oil Use for richer taste
  • 3 cloves garlic Minced

  • 1 lb shrimp Peeled and deveined
  • 4 cups fresh spinach
  • 1 cup diced tomatoes Fresh or canned
For the Garnish
  • 1/4 cup Parmesan cheese Grated

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant for 1-2 minutes.
  3. Add shrimp to the skillet and sauté until pink and opaque, approximately 3-4 minutes.
  4. Stir in fresh spinach and diced tomatoes, cooking for 2-3 minutes until spinach wilts and tomatoes soften.
  5. Add the cooked pasta to the skillet, mix well, and add reserved pasta water if needed. Season with salt and pepper.
  6. Plate the pasta hot, garnishing with grated Parmesan cheese before serving.
