Cooking Steps
- Bring a large pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant for 1-2 minutes.
- Add shrimp to the skillet and sauté until pink and opaque, approximately 3-4 minutes.
- Stir in fresh spinach and diced tomatoes, cooking for 2-3 minutes until spinach wilts and tomatoes soften.
- Add the cooked pasta to the skillet, mix well, and add reserved pasta water if needed. Season with salt and pepper.
- Plate the pasta hot, garnishing with grated Parmesan cheese before serving.
