Step-by-Step Instructions for Perfect Sourdough Grilled Cheese
  1. Preheat a cast-iron skillet over low heat. Slice two ½-inch thick pieces of sourdough bread and grate cheeses.
  2. Spread mayonnaise evenly on one side of each slice of bread.
  3. Melt unsalted butter in the skillet and swirl to coat.
  4. Layer grated cheddar and gruyère on the bread in the skillet. Cover with the second slice of bread, mayo-side up.
  5. Cover the skillet and cook for 2-3 minutes until the bottom is golden brown.
