Cooking Steps
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
  2. Pat dry the chuck roast and season generously with kosher salt.
  3. Heat vegetable oil in a Dutch oven and sear the chuck roast on all sides for about 10 minutes.
  4. Sauté the sliced sweet onion for about 4 minutes until softened.
  5. Add minced garlic and grated ginger; cook for 1 minute until fragrant.
  6. Mix in gochujang, brown sugar, and soy sauce, stirring until combined.
  7. Return the beef to the pot and pour in beef stock until meat is nearly submerged. Simmer for 5 minutes.
  8. Cover and braise in the oven for 2 hours, checking occasionally for sufficient liquid.
  9. Let the pot roast rest for 10-15 minutes before serving.
