- Remove the whole rib eye roast from the refrigerator and let it rest at room temperature for 30-60 minutes prior to cooking.
- Preheat your oven to 500°F while you prepare the seasoning mix and gather your equipment.
- In a mixing bowl, combine 6 tablespoons of olive oil with 1/2 cup of kosher salt, 4 tablespoons of crushed tri-color peppercorns, 1/2 cup of minced garlic, and the fresh rosemary and thyme. Mix well until all the ingredients are evenly coated.
