Ingredients
  

For the Pasta
  • 8 ounces elbow macaroni or penne Cook to al dente
For the Charred Corn
  • 2 cups sweet corn kernels Fresh or frozen
  • 2 tablespoons butter Or olive oil as a substitute
For the Creamy Dressing
  • 1 cup mayonnaise Or vegan mayonnaise
  • 1 lime juice from Adjust to taste
For Flavor
  • 1 teaspoon chili powder Adjust for spiciness
  • 1 teaspoon smoked paprika Can swap for regular paprika
  • to taste salt
  • to taste black pepper
For Garnish
  • 1/4 cup chopped cilantro leaves Or parsley
  • 1/2 cup crumbled cotija cheese Or feta cheese
Optional Add-Ins
  • 1 jalapeño pepper, seeded and minced Optional
  • 1 cup diced avocado Optional
  • 1/2 cup bacon bits Optional
  • 1 can black beans Optional

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Melt butter in a skillet over medium-high heat. Cook corn for 8-10 minutes until charred and golden.
  3. Remove corn from heat. Stir in chili powder and smoked paprika, and allow to cool.
  4. In a mixing bowl, combine pasta, charred corn, mayonnaise, lime juice, cilantro, and cotija cheese. Toss gently to coat.
  5. Season with salt and black pepper. Refrigerate for at least 30 minutes.
  6. Before serving, toss again and garnish with extra cilantro or cotija cheese as desired.
