Cooking Steps
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Melt butter in a skillet over medium-high heat. Cook corn for 8-10 minutes until charred and golden.
- Remove corn from heat. Stir in chili powder and smoked paprika, and allow to cool.
- In a mixing bowl, combine pasta, charred corn, mayonnaise, lime juice, cilantro, and cotija cheese. Toss gently to coat.
- Season with salt and black pepper. Refrigerate for at least 30 minutes.
- Before serving, toss again and garnish with extra cilantro or cotija cheese as desired.
