Baking Steps
- Preheat the oven to 350°F (175°C) and line two 8-1/2" x 4-1/2" loaf pans with parchment paper.
- In a large mixing bowl, blend together yellow cake mix, pistachio pudding mix, eggs, vegetable oil, carbonated water, and sour cream using a hand mixer on low speed for about 2 minutes.
- Pour the thick batter into the prepared loaf pans and smooth the tops with a spatula.
- Bake in the preheated oven for 45-50 minutes until golden brown and a toothpick comes out clean.
- Cool the loaves in the pans for 10 minutes, then transfer them to a wire rack to cool for an additional 30 minutes.
- Whisk together powdered sugar, milk, and almond extract until smooth to make the icing.
- Drizzle the icing over the cooled loaves and allow it to set for about 10 minutes before slicing.
