Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice. Set aside.
  3. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Fold the dry ingredients into the wet ingredients gently until just combined.
  5. In a separate bowl, beat the cream cheese until smooth, then mix in the granulated sugar, egg yolk, and a splash of vanilla extract.
  6. Fill each muffin cup about one-third full with the batter, then add a spoonful of the cream cheese filling, followed by more muffin batter until two-thirds full.
  7. Use a toothpick to swirl the cream cheese filling into the batter.
  8. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
