  • 1/2 cup Soy Sauce Substitute with tamari for gluten-free
  • 2 cloves Garlic Minced
  • 1 tbsp Fresh Ginger Grated
  • 1/4 cup Red Wine or Mirin
  • 2 tbsp Brown Sugar Can use honey as an alternative
  • 2 tbsp Rice Vinegar
For the Skewers
  • 1 lb Boneless Chicken Cut into 1-2 inch chunks
  • 1 tbsp Cornstarch For thickening sauce
  • 10 pieces Wooden Skewers Soaked in water
For Serving
  • 2 cups Steamed Rice
  • 1 cup Pickled Vegetables
  • 2 cups Miso Soup or Edamame Optional side

Method
 

Preparation Steps
  1. Soak wooden skewers in water for 10-20 minutes to prevent burning.
  2. Whisk together soy sauce, water, red wine or mirin, brown sugar, and rice vinegar. Reserve half for basting.
  3. Trim excess fat from chicken and cut into bite-sized pieces. Pound to even thickness.
  4. Combine minced garlic, grated ginger, and a portion of sauce in a bowl. Marinate chicken for at least 10 minutes.
  5. Boil the remaining sauce in a saucepan, simmer for 5 minutes, and thicken with cornstarch if desired.
  6. Preheat grill to medium-high heat. Thread marinated chicken onto skewers and grill for 8-12 minutes, basting occasionally.
  7. Serve skewers over steamed rice with additional sauce and sides.
