Step-by-Step Instructions
  1. Ensure your whole turkey is completely thawed. Preheat the oven to 450°F (232°C). Prepare your workspace with all necessary tools.
  2. Pat the turkey dry with paper towels. Generously season the turkey inside and out with salt and pepper.
  3. In a mixing bowl, combine mayonnaise, sage, rosemary, and thyme. Season with salt and pepper.
  4. Stuff the turkey cavity with sweet onion, garlic, celery, and lemon. Close the cavity with kitchen twine.
  5. Apply the mayonnaise mixture over the surface of the turkey, coating it evenly.
  6. Place the turkey in the oven at 450°F (232°C) for the first 20 minutes.
  7. After 20 minutes, reduce the oven temperature to 350°F (177°C) and continue roasting until internal temperature reaches 165°F (74°C).
  8. If browning too quickly, tent the turkey loosely with aluminum foil.
  9. Once the turkey reaches temperature, let it rest for at least 20-30 minutes before carving.
  10. While resting, whisk pan drippings with flour and chicken stock to create gravy.
