- Ensure your whole turkey is completely thawed. Preheat the oven to 450°F (232°C). Prepare your workspace with all necessary tools.
- Pat the turkey dry with paper towels. Generously season the turkey inside and out with salt and pepper.
- In a mixing bowl, combine mayonnaise, sage, rosemary, and thyme. Season with salt and pepper.
- Stuff the turkey cavity with sweet onion, garlic, celery, and lemon. Close the cavity with kitchen twine.
- Apply the mayonnaise mixture over the surface of the turkey, coating it evenly.
- Place the turkey in the oven at 450°F (232°C) for the first 20 minutes.
- After 20 minutes, reduce the oven temperature to 350°F (177°C) and continue roasting until internal temperature reaches 165°F (74°C).
- If browning too quickly, tent the turkey loosely with aluminum foil.
- Once the turkey reaches temperature, let it rest for at least 20-30 minutes before carving.
