For Cooking Liquid
  • 2 cups Beef Broth Chicken broth works too
  • 2 tablespoons Limes Squeeze of fresh lime juice
For the Tortillas
  • 2 tablespoons Butter Can swap for olive oil
  • 12 mini Corn Tortillas Gluten-free option

Method
 

Preparation Steps
  1. Place your flank steak in the slow cooker and drizzle generously with olive oil.
  2. Combine minced garlic, chili powder, paprika, cumin, salt, and pepper to create a spice mix and rub it over the flank steak.
  3. Sprinkle chopped cilantro and diced onion over the steak, squeeze lime juice, and pour beef broth into the slow cooker.
  4. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the beef inside the slow cooker using two forks and mix in remaining juice.
  6. Melt butter in a skillet and fry mini corn tortillas until slightly golden and crisp.
  7. Assemble tacos by stacking two tortillas, filling with shredded beef and adding toppings of choice.
