  • 2 tablespoons Butter Olive oil is a great dairy-free substitute.

Method
 

Step-by-Step Instructions
  1. Start by cleaning and slicing mushrooms, finely chopping onion and garlic.
  2. Heat olive oil in a large skillet over medium heat, add onion and garlic, sautéing for 3-4 minutes.
  3. Add mushrooms, cook for 6-8 minutes until golden brown.
  4. Sprinkle in thyme and paprika, stirring for 1-2 minutes.
  5. Pour in vegetable broth and heavy cream, bring to a boil, then simmer for about 10 minutes.
  6. In another pot, bring water or vegetable broth to a boil, whisk in polenta, and cook until creamy.
  7. Stir in Parmesan cheese and butter into polenta, season with salt and pepper.
  8. Serve polenta topped with the mushroom ragout.
